Italy!


I finally made my move and am starting to settle in a new part of the world. The past months have been crazy but the hard part is over now. 
I've slackened on my percentage of how much raw I eat. I was about 99% and am now about 75%.
Being celiac and intolerant to cow dairy, eggs, and soy, it is so much easier to eat food in restaurants here. There is always a variety of risotto, sea food dishes, and salads. I still try to be mostly raw but when it comes to social situations it is easier to eat with everyone else rather than be an outsider. 
Since I have been here I have made one raw carrot cake and banana icecream. There is a problem here for flavor though. For one, I cannot find coconut oil anywhere so when I came I brought a giant container of it. Also, the vanilla is powdered or in whole bean form. It just tastes so much different than my pure organic vanilla extract that I used to use. 
I sent my green star juicer and my vitamix in the mail. They arrived last week but I am having an issue with the power. I need to get a converter before I can use them. So, sadly, I am not making all the wonderful dishes that I would be with them. 
I am having a fabulous time here and going to the sea every weekend. The sea is so amazing and so healing. I was getting sick on Thursday and I still felt bad on Friday. We  went to the sea Friday night and I was feeling better. I even had wine with dinner. I felt great on Saturday and Sunday and swam and hung out in the sun. Sunday evening when I got back to the city and after I took a nap I felt terrible again. I am feeling better now anyway and hope to get back to school tomorrow.
